Understanding the National Food Hygiene Rating Scheme


The National Food Hygiene Rating Scheme (FHRS) was introduced by the Food Standards Agency in December 2008 and is now implemented across Wales, Northern Ireland, and 99% of England.


The scheme is designed to help consumers make informed choices about where they eat and buy food. In practice, businesses that are broadly compliant with food safety laws and effectively managing food risks typically receive a rating of three, while those demonstrating excellent standards can achieve a rating of four or five. However, any significant lapses in compliance can have a major impact on the final rating.


This course provides a comprehensive overview of how the FHRS works, including:

  • How food hygiene ratings are determined

  • The Safer Food, Better Business management system
